Baked "Poutine" Yams

Poutine has become so popular over the last few years, but I don't eat french fries very often.  So I decided to change it up and mix the great aspects of poutine into a baked yam.
Ingredients:
2 yams
1 cup of cheese curds (You can use white or orange cheddar.  I like to mix both.)
1 cup  of poutine gravy (If you can't find poutine gravy, you can use brown gravy.)

Directions:
1. Preheat oven to 375 F
2. Puncture the yams multiple times with a fork and then place on a baking sheet.
3. Cook for 1 hour, or until fork tender.
4. Slice the yams in half and scoop out the flesh, leaving the skins intact.
5. Mix the yam flesh with the cheese curds and gravy and then load the mixture back into the skins.
6. Bake for another 20 minutes, or until the cheese is gooey and the gravy is bubbling.
