Baked Zucchini 'Spaghetti'

Baked spaghetti used to be one of my favorite go to recipes, but somehow I just forgot about it over the last few years.  With fall coming, good hearty meals will be making their way back onto our household menu!




Ingredients:
2 zucchini
1 1/2 cups prepared pasta sauce
1 cup mozzarella

Directions:
1.  Preheat oven to 350 F.
2.  Slice or spiralize zucchini into noodles.
3.  Boil water and blanch zucchini for 2 minutes.
4.  Place noodles in a small baking dish and stir in pasta sauce.
5.  Top with cheese and bake for 30 minutes, or until cheese is bubbling.
