Roasted Artichokes

I feel like artichokes are sadly underrated vegetables.  Most people eat them in dips, but rarely ever buy artichokes on their own.  The good news is, they are so easy to prepare!



Ingredients:
1 artichoke
1/2 lemon
2 Tbsp. coconut oil
1 tsp. minced garlic
salt and pepper

Directions:
1. Preheat oven to 425 F.
2. Cut off the top inch of the artichoke and then halve it lengthwise.
3. Rub the minced garlic onto the cut side of the artichokes and then add a pinch of salt and pepper.
4. Melt the coconut oil and drizzle on top. 
5. Juice the lemon half and pour onto the artichoke halves.
6. Wrap each half in foil and bake for an hour and a half.
7.  Let the artichokes sit for about 15 minutes to cool and then dig in!

To eat the artichokes, pull the leaves through your teeth to get the delicious, soft section of the artichoke.  You can also dip the leaves in a citrus aoli for an extra little burst of flavor.
