Guacamole Veggie Pizza

I am definitely a pizza girl, with all of that gooey cheesy goodness and an infinite selection of toppings.  But, sometimes I like a little change from the typical tomato sauce, and I have discovered that guacamole is a great substitute,



Ingredients:
1 pre-made pizza crust (I used a Pillsbury one)
2 ripe avocados
1/4 cup diced red onion
1/2 Tbsp. pizza sauce spice mix
1 cup grated mozzarella cheese
1 Tbsp. nutritional yeast flakes
Pizza toppings of your choice.  I used 1 small tomato, 1/2 cup green peppers, 2 crimini mushroom, 1/2 cup pineapple, 1/4 cup of green olives and 1/4 cup of jalapenos.

Directions:
1. Preheat oven to 400 F.
2. Mash the avocados and mix in the chopped onion and pizza spice.
3. Chop all pizza toppings.
4. Press pizza dough into a 10" pan, preferably springform for easy removal.  Push the dough up the sides for a more deep dish pizza.
5. Spoon the avocado mixture into the pizza crust and add your chosen pizza toppings.
6. Top with mozzarella cheese and then sprinkle the nutritional yeast on top.
7. Bake for 15 minutes.
8. Allow the pizza to cool for a couple minutes, then remove the outside of the springform pan.

Slice up and enjoy!

*Note; the pizza dough instructions state that you should pre-bake it for 8 minutes and then add the toppings, however, I have found that the end result is better if you don't.  Pre-baking seems to allow for air bubbles and an uneven crust.
