Grilled Shrimp Skewers

Summer is coming, which means that those of us who live in colder areas can finally start breaking out the barbecues.  Some of my favorite things to throw on the grill include fruits, vegetables and seafood.  One thing I can never turn down is a good shrimp skewer!



Ingredients:
36 raw shrimp (approximately 1 lb)
1/4 cup Limoncello
1 Tbsp. oil (I used avocado oil)
1 Tbsp. chopped garlic
1 tsp, paprika
1 tsp, parsley
1/4 tsp, salt
1/2 tsp. pepper
6 wooden skewers

Directions:
1. Peel shrimp and, if you would like, remove the tails as well,
2. Place shrimp in a large bowl, add Limoncello, oil and seasonings, mix well and set aside.
3. Place skewers in water and set aside to soak for 20 minutes.
4. While skewers are soaking, heat the grill to medium-high heat.
5. Once the skewers have soaked, put 6 shrimp on each one.
6.  Grill for 3 to 4 minutes, until they are opaque and pink with some nice grill marks.
