Grilled Halloumi Sandwich

If you've never tried halloumi cheese, you are missing out, trust me!  I tried it for the first time a couple of years ago and I was instantly hooked.  It is firm and salty, and grills up so perfectly.





Ingredients:
2 slices of french bread
2 slices of halloumi cheese
2 slices of tomato
1/2 of an avocado
1 Tbsp. basil paste
1 Tbsp. butter

Directions:
1. Butter the outside of the two slices of bread and set aside.
2. Grill the slices of cheese in a frying pan over medium heat.  You will need to cook the cheese for about 5-6 minutes per side to get it nice and golden.
3. Spread the basil paste on the inside of one slice of bread.  Top with the cheese and tomato slices.
4. Mash the avocado and spread it on the inside of the other slice of bread,
5. Put the sandwich together and place it in a frying pan over medium heat.  Cook for about 2 minutes per side.
