Lemon Shortbread Cookies

Shortbread cookies are a favorite in our family, but sometimes I like to add new flavors for a little change.
Ingredients:
1 lb of butter
1 tsp. vanilla extract
2 tsp. lemon extract
1 1/4 c. icing sugar
3/4 c. cornstarch
3 1/4 c. flour
1/4 tsp. salt

Optional:
Lemon zest and icing sugar for decorating.

Directions:
1. Preheat oven to 350 F.
2. Whip butter for 15 minutes.  It will be very white and fluffy when you are done.
3.  Add vanilla and lemon extracts and whip for about 5 more minutes.
4. Sift in icing sugar, in sections, beating after each addition.
5.  Add flour, in sections, beating after each addition.
6. Add cornstarch and salt and beat again.
7. Drop large tablespoons of dough onto cookie sheets.  You can shape the cookies if you want to, but it is not necessary.
8. Bake for 20 to 30 minutes, or until cookies start to brown.

Optional: dust with icing sugar and lemon zest before serving.
