Lobster Ravioli Lasagna 2 Ways

Valentine's Day is almost here and ravioli lasagna is a beautiful dish that is so delicious and so easy to prepare.  You can either use a white sauce or a tomato sauce.  It is amazing either way.

Ingredients:
1 1/4 cups sauce
1 package of lobster ravioli (I buy the Giovanni Rana 2 packs at Costco)
8 cups of greens, such as spinach, kale or any mix. If you don't like as much you can use only 4 cups or even none at all.
2 eggs
1 cup cottage cheese
1 3/4 cups grated mozzarella
1/4 cup grated parmesan
salt and pepper, to taste

1. If adding greens, wilt them in a pan over medium heat.  I use a non-stick pan without any oil.
2. Preheat oven to 375 degrees F.
3. Grease an 8" x 8" baking dish.
4. Combine 1 1/4 cups of the mozzarella with the cottage cheese, parmesan, eggs, salt and pepper.
5. Coat the base of the dish with 1/4 cup of sauce.
6. Add one layer of ravioli.
7. Add half of the wilted greens (if using).
8. Add half of the cheese mixture.
9. Add 1/2 cup of sauce.
10. Repeat steps 6 through 9.
11. Top with the remaining 1/2 cup of mozzarella.
12. Bake for 35 minutes until the cheese is bubbly and starting to brown.
