Steamer Smashed Potatoes

I happen to be a potato skin kinda girl, so I tend to prefer smashed up potatoes that still have potato peel and chunks over whipped ones (not that those aren't amazing, too)!


Ingredients:
6 cups cubed, unpeeled potatoes
1/4 cup milk
2 Tbsp. butter
salt and pepper to taste

Directions:
1.  Put a large pot of salted water on to boil.  While the water is boiling, wash and cube the potatoes.
2.  Once the water starts to boil, put the potatoes in a steamer pan on top of the pot and cover.
3.  Steam for 20 minutes, or until fork tender.
4.  Transfer to a bowl and mash with a hand masher until the potatoes are mainly broken up and starting to mash together well.
5.  Add the butter and milk and continue to mash until mainly smooth, but with some potato chunks still in the bowl.
6.  Season with salt and pepper to taste.
