Ingredients:
2 long english cucumbers
1/4 cup grated parmesan
1/8 cup pine nuts
1 clove garlic
1/4 cup spinach
1 sprig of fresh dill
1/8 - 1/4 cup avocado or olive oil (I personally prefer avocado for this)
Directions:
1. Peel the cucumbers, remove the seeds and then grate the cucumber. I used a food processor to speed up the grating process.
2. Put shredded cucumber in a colander and let drain for 20 minutes.
3. Put cucumber in a food processor with all ingredients but the oil.
4. Blend the ingredients together, slowly pouring the oil in. Add as much or as little oil as you need to get to the desired consistency.
This makes the perfect sauce for a cold pasta salad or a warm pasta, and a lovely topping for appetizers.
