Ingredients:
3 small beets, cooked and peeled
2 medium tomatoes
1 bunch of basil
4 slices of mozzarella
salt and pepper
Directions:
1. Puree the basil in a food processor or blender until you have a paste.
2. Slice the beets and tomatoes so that you have 16 slices of each.
3. Cut 4 slices of mozzarella, and then quarter each slice.
4. Stack in the following order: tomato, beet, and cheese. Top each stack with a dollop of pureed basil.
5. Top each stack with a dash of salt and pepper.
