Fresh tomatoes and good seasoning are a perfect chicken topper, while the secret ingredient (i.e. mayonnaise) keeps the chicken perfectly moist.
Ingredients:
4 raw chicken breasts
2 cups chopped tomatoes
1/4 cup chopped basil
1 1/2 tsp. chopped garlic
1/4 cup crumbled feta
1/4 cup mayonnaise
2 Tbsp. balsamic vinegar
salt & pepper
Directions:
1. Preheat oven to 425 F.
2. Chop tomatoes and basil and throw into a bowl.
3. Stir in chopped garlic, add salt and pepper to taste and mix well.
4. Mix balsamic vinegar and mayonnaise in a small bowl.
5. Place chicken breasts in a small baking dish and top with the mayonnaise and vinegar mixture.
6. Top the chicken with the tomato mixture.
7. Crumble the feta cheese on top of the dish.
8. Bake for 30 to 35 minutes, until the chicken is fully cooked (165 F when checked with a meat thermometer).
Don't feel like waiting for it to bake after work? The actual prep time is less than 15 minutes, so add 2 cups of chicken stock and throw this in the slow cooker on low for 8 hours so you can enjoy it right away when you get home. I have had it both ways and they are equally delicious!
Fun tip: don't dispose of the leftover liquid in the baking dish/slow cooker. Reheat it in a saucepan, allowing it to thicken, and use it as pasta sauce. Or, cook your pasta right in the leftover liquid for an even quicker accompaniment for your leftovers!
