Salad Bouquets

I love serving salad as a starter or side with any meal, but for special occasions, I like to make it look fancy.

Ingredients (per 2 bouquets):
1/4 long english cucumber
1 roma tomato
1 small carrot
1/3 bell pepper (red, orange or yellow)
1 loosely packed cup of mixed greens
1 Tbsp. feta cheese
1 Tbsp. salad dressing

Directions:
1. Cut of ends of tomato and then cut in half so that you have two thick slices.  Hollow the slices and set aside.
2. Slice cucumber, carrot and peppers into strips or curls.
3. Lay half of the greens down and top with half of the sliced carrot, pepper and cucumber.
4.  Grasp the vegetables in a tight bundle and stuff into a hollowed out tomato slice.
5. Place on a plate, sprinkle with feta and drizzle with dressing.
6. Repeat for the second bouquet.
