Arlene's Green Tomato Topping

This past fall, I was lucky enough to get some delicious fresh tomatoes and onions from a co-worker.  She brought in a nice assortment of red and green tomatoes, and I don't get green tomatoes often, so these were definitely a treat!  That's why this topping is name in her honor.




Ingredients:
4 medium green tomatoes, chopped
½ small yellow onion, diced
1 red bell pepper
1 orange bell pepper
1 clove garlic, minced
½ tsp pea shoots (optional)
1 ½ tsp pink sea salt
1 ½ tsp pepper
¼ cup white wine
¼ cup olive oil
½ tsp dried parsley
½ tsp dried oregano
½ tsp dried thyme
½ tsp dried basil
1Tbsp black raspberry balsamic vinegar

Directions:
1. Heat olive oil over medium heat
2. Add onion and sauté for 5 minutes
3. Add garlic and cook for another 1 minute
4. Add tomatoes, peppers, wine and seasoning, but not the balsamic vinegar.  Mix well and cook for approximately 20 minutes, or until tomatoes are soft.
5. Reduce to low-medium heat, and add balsamic vinegar
6. Cook for 15 minutes, or until thick

Makes 4 cups.

I recommend serving this with bread and a nice salty cheese.
