Coco-Chia Chiller

For a lot of us, summer means barbecues and beverages while we take in the nice weather.  I find that it is nice to switch from beer and coolers to some lighter drinks once in a while .


Ingredients:
1/4 cup chia seeds, hydrated in coconut water
1 shot (1.5 oz) of clear alcohol (optional)
Juice of 1/4 of a lemon
Sparkling water to top off

Directions:
1. Put chia seed gel in a glass and squeeze in the juice from 1/4 of a lemon.
2. Add alcohol, if desired.
3. Top with carbonated water and garnish with a slice of lemon.

I like to use the President's Choice Blue Menu Blueberry Pomegranate Sparkling Water, as it adds great flavor to the drink.
