Ingredients:
1 package of lobster ravioli (I buy the Giovanni Rana brand from Costco)
1 Tbsp. avocado oil
1 tsp. minced garlic
1 small zucchini, diced
4 grape tomatoes, roughly chopped
2 cups baby kale
1 Tbsp. lemon juice
2 Tbsp. cream cheese
2 Tbsp. butter
2 Tbsp. pasta water
Directions:
1. Heat avocado oil in a non-stick pan over medium heat.
2. Add the minced garlic and cook for 1-2 minutes, until fragrant.
3. Add the zucchini, tomatoes, kale and lemon juice and cook until the kale is wilted. Meanwhile, boil a large pot of water for the ravioli.
4. Add the cream cheese and butter to the sauce, allowing to melt and become creamy.
5. Cook the ravioli for 3 minutes and then drain, reserving 2 tablespoons of pasta water.
6. Add the ravioli and pasta water to the pan and toss gently.
Serve and enjoy!
