Now that winter has hit, there is nothing more comforting than pasta with homemade sauce!
Ingredients:
2 Tbsp. olive oil
1/4 of a small yellow onion, diced
1 tsp. garlic*
2 cups of chopped bell peppers (any color)
6 medium tomatoes
1/4 cup white wine
1/2 tsp. each of dried parsley, oregano, basil, thyme and black pepper
1 1/2 tsp. sea salt
1 Tbsp. balsamic vinegar
Directions:
1. Heat olive oil over medium heat and then add the onion. Let the onion cook for about 5 minutes, until they are soft and fragrant.
2. Add the bell peppers and garlic and cook for another 5 minutes.
3. Add the tomatoes, wine, and dried seasoning. Cook for 15 more minutes, until the tomatoes are soft and the flavors have blended.
4. Add the balsamic vinegar and cook for 5 more minutes, allowing the sauce to thicken.
*If you want spicier sauce, you can use a garlic-ginger-chili blend instead of just garlic.
Serve with pasta or as a bread topping.
