Ingredients:
8 slices of maple bread (I use the PC Extra Thick Sliced Maple Loaf from Superstore)
4 eggs
1/2 cup milk
1/2 tsp. cinnamon
1 tsp. vanilla extract
1 tsp. butter flavoring (I use butter flavoring so that I don't have to put butter on the toast, but you can omit the flavoring and put butter on the toast instead)
zest of 1/4 of a lemon
Directions:
1. Heat a non-stick pan or skillet over medium heat.
2. While the pan is heating, whisk all ingredients (except the bread) in a bowl, ensuring that everything is well mixed.
3. Dip each piece of bread in the mix and coat both sides. Let the extra liquid drain off and then put the bread in the pan.
4. Cook for 2 minutes per side and then serve. The outside will be nicely toasted and the inside will be soft and gooey.
I like to dust mine with icing sugar, and I don't add any extra maple syrup because of the flavored bread.
