Cauliflower has become the mighty "hidden" vegetable ingredient in so many items, but it really should be celebrated for how delicious it is on its own. I am a sucker for almost any roasted vegetable and cauliflower is no exception.
Ingredients:
1 head of cauliflower
2 Tbsp. oil (avocado works well)
1 Tbsp. tamari sauce
1 Tbsp, balsamic vingear
1 tsp, salt
1 tsp, pepper
1 tsp. garlic powder
Directions:
1. Preheat oven to 425 F.
2. Roughly chop cauliflower and place on a large baking sheet.
3. Drizzle with oil.
4. Sprinkle with spices.
5. Drizzle with tamari and balsamic vinegar.
6. Bake for 20 minutes, flipping halfway through.*
*The cauliflower that is touching the baking sheet will start to caramelize in the tamari and balsamic vinegar, so you want to make sure that you flip it and get that flavor all over the cauliflower.
