Croque Monsieur Style Breakfast Quesadilla

I love savory breakfasts, and I am always looking for ways to throw more greens into my meals, so breakfast quesadillas are always a great option.


Ingredients:
2 whole wheat tortillas
1/2 cup mixed greens
1/2 cup chopped ham
1/4 cup grated cheese
1 Tbsp. Dijon mustard

Directions:
1. Spread 1/2 Tbsp. mustard on one side of each quesadilla
2. Top one quesadilla with all other ingredients.
3. Place second quesadilla on top, mustard side down.
4. Broil for about 10 minutes, or until cheese is melted.
