I personally love eggs, and I think that they make a great, filling breakfast. This takes only minutes to make and it tastes delicious.
2 eggs
2 small mushrooms (crimini or button work well)
2 Tbsp. cheese (any kind you like)
1 tsp. fresh herbs, such as parsley
salt and pepper
Directions:
1. Dice mushrooms and cheese and finely chop the herbs.
2. Crack one egg into a ramekin or bowl. Top with mushrooms, cheese and herbs.
3. Season with salt and pepper.
4. Crack remaining egg on top.
5. Microwave for about a minute and a half, or until eggs are as firm as you would like. For a more soft boiled consistency, microwave for only a minute.
